How to make Copycat Chipotle Chicken:
- Add all of the of the ingredients (aside from the chicken) into blender or food processor. Puree until smooth.
- Repeatedly stab chicken with fork to let the marinade have space to soak in. If you marinate overnight, you won’t need to stab it too much. If you’re marinating for just a few hours be certain to stab the chicken a bunch so the flavors can genuinely soak in.
- Cover the chicken in the Chipotle chicken marinade. Refrigerate for at least one hour (or you can leave it on overnight). I also freeze the chicken like this so it’s easy to thaw and cook when I’m alert!
- After your chicken is done marinating it’s time to cook! Tug the chicken out of the marinade and cook on grill or in the Instant Pot. The marinade is left on the chicken in my pictures, but I normally cook it without :)
- You can grill on medium tall heat on an indoor grill where the chicken can be pressed flat.
- If using a skillet, heat oil to medium tall. Put a foil-wrapped brick on top of chicken to press it flat.
- If cooking this chicken in an Instant Pot, you can add 1-2 cups cup broth on top of the chicken breasts and cook on your meat/poultry setting. This should set your timer for 12 minutes on tall prescertain. If your chicken is not cooked enough after 12 minutes, set your pot to saute until it it’s 165 degrees.
If using an outdoor grill, cook over charcoal to get the best flavors. Again, use a foil wrapped brick to press chicken flat.
